The beauty of sprouted grain is that it makes vital nutrients more available than unsprouted grain. The major benefit is that after sprouting, the nutrient are in a state that can more readily be absorbed and digested by the body. Phytic acid , and enzyme inhibitor, is present in the outer, or bran, layer of whole grain. It can combine with calcium, magnesium, copper, iron and especially zinc in the intestinal tract and block their absorption. Sprouted grains contain enzymes, lactobacillus and other helpful organisms which break down and neutralize phytic acid, allowing your body to better absorb and nutrients. This is what aids digestion.
